Field Roast Pasta Salad

This stylish and tasty salad is excellent.

INGREDIENTS
3 lbs Smoked Tomato Field Roast, julienned
1/4″ thick 1 1/2 lbs penne pasta
3 lbs broccoli florets
1 lb red onion, sliced
1 1/2 cups red pepper, roasted
3 cups tomatoes, cut into strips

Dressing
1 1/2 cups lemon juice
1 1/2 cups balsamic vinegar
1 tbsp salt
2 tsp black pepper

DIRECTIONS
1. Prep Field Roast and vegetables. 2. Cook pasta, cool in water bath and lightly oil. 3. Prepare dressing. 4. Combine Field Roast, vegetables, add dressing.

Parmesan Al Field Roast

Field Roast is excellent as a breaded cutlet. This Field Roast presentation is much more attractive than the traditional one done with veal.

INGREDIENTS
3 oz Field Roast, thin sliced off the loaf – approx 1/4″ thick
1/4 cup flour
1/3 cup water
1/4 cup vegan parmesan cheese
1/4 cup panko (rice flour breading)
1 oz canola oil
3 oz marinara tomato sauce, hot

DIRECTIONS
1. Slice Field Roast cutlet using meat slicer into 1/4″ thick slice. 2. Combine flour and water to make slurry paste. 3. Combine parmesan cheese and panko in bowl. 4. Dip cutlet into flour/water mixture.
5. Bread cutlet by dredging in Parmesan cheese and panko. 6. Sauté cutlet in hot canola oil either on grill or in pan, brown on each side. 7. Place on plate and cover with marinara sauce.

Mediterranean Sautè

A mélange of textures and flavors! This classic combination of tomatoes, garlic, capers, black olives, onions and lemon juice is zesty and full of bold taste. Clean and crisp. Served over pasta, but you could also use rice if you wish.

INGREDIENTS
3 tbsp olive oil
1/4 cup yellow onions, diced
1/4 cup zucchini, diced
1 cup tomatoes, diced in juice
1 tsp capers
2 tsp black olives, diced
6 oz Lentil Sage Field Roast
1/2 tsp basil
1 tbsp parsley, chopped
1 tbsp lemon juice
1 tsp garlic, fresh, minced
1 cup pasta, cooked

DIRECTIONS
1. Peel and dice onions. 2. Saute onions, garlic, and zucchini on medium heat until translucent. 3. Add Field Roast and saute until edges start to brown. 4. Add remaining ingredients, except pasta, and simmer until heated thoroughly. 5. Serve over pasta.
